At the heart of the system are biodegradable inner liners that create a sealed, oxygen-free fermentation environment. By eliminating oxygen exposure during fermentation, we protect the integrity and quality of our wines from the very first day. The closed system also dramatically reduces our reliance on caustic cleaning chemicals and conserves water — a meaningful step toward a more sustainable cellar.
Remote monitoring allows us to track fermentation health in real time, with automated punch-downs and precise temperature control giving us a level of consistency that small-batch winemaking rarely affords. We know what the wine is doing at every hour of the process.
Once fermentation is complete, our wines move into élevage — an intentional combination of GoFermentor aging and traditional barrel maturation. This hybrid approach lets us honor time-tested techniques while embracing the precision and sustainability that define Kerith House’s care for the environment and its exceptional wines.
