Roasted Garlic and Wine Drizzle Salmon Salad

Do you need a super simple, refreshing, delicious, and nutritional dinner idea? Who doesn’t? There is one catch. This recipe is dependent on my Roasted Garlic and Wine Drizzle, available in our Farmstand collection.
Every time I describe this recipe to guests, I start craving it. There is a lot of flexibility so make it your own.
Roasted Garlic and Wine Drizzle Salmon Salad
Ingredients:
- Spinach
- Salmon fillets (I like them with the skin on)
- Something salty like bacon, roasted pecans, feta, etc.
- Fruit like peaches, strawberries, or blueberries
- Neutral oil or even better, bacon flavored olive oil
- Kerith House Roasted Garlic and Wine Drizzle (Sorry, it can only be sold within Georgia for the moment.)
Start by cooking the salmon. I like to start it in a hot, oiled skillet, skin side down for about 3 minutes then put it in a hot oven for 5-7 minutes. Total cook time should not be more than 10 minutes. I do like to flip it once to caramelize the meat side. I don’t like the internal temperature to exceed 134 degrees. As soon as it comes out, glaze it with the Roasted Garlic and Wine Drizzle.
To make the salad, put down a bed of spinach, then the salmon, fruit, and salty component.
For the dressing you can either mix the drizzle with oil or put them on the salad separately. Done!
