All The Good Stuff Ice Box Cake
Summary
Do you like peanut butter with chocolate? If you look at my Pinterest board, the majority of the desserts have those two flavors. This weekend I hosted a gathering of my college girlfriends and made a version of a recipe I had found a few years ago. It not only has this classic combo but also caramel AND Oreos. It was definitely the culinary hit of the weekend so I promised them I would post it first. I give you "All The Good Stuff Ice Box Cake".

ALL THE GOOD STUFF ICE BOX CAKE
INGREDIENTS
- 2 C heavy whipping cream
- 1 3/4 C powdered sugar, divided
- 1 t vanilla or vanilla bean paste
- 8 oz cream cheese, softened
- 12 oz creamy JIF peanut butter
- 2/3 C salted caramel ice cream topping, divided
- 16 Oreo cookies, crushed
- 4 oz Ghirardelli dark melting chocolate
- 1/2 C honey roasted peanuts, chopped
DIRECTIONS
In a stand mixer, whip:
- whipping cream
Gradually add:
- 3/4 C powdered sugar
- vanilla or vanilla bean paste
Whip until stiff peaks form. Refrigerate.
For filling, combine and beat until fluffy:
- cream cheese
- peanut butter
- 1/3 C salted caramel ice cream topping
- 1 C powdered sugar
Fold in:
- half of the whipped cream
Line a 9″ x 5″ loaf pan with parchment paper so there are long pieces hanging over both sides. Layer 1/3 peanut butter mixture, them 1/3 whipping cream, then repeat two more times.
Cover the top with:
16 crushed Oreo cookies
Refrigerate for at least 3 hours. You can freeze this but I like mine on the softer side.
When ready to serve, melt about:
- Ghirardelli melting chocolate
Heat up:
- 1/3 C salted caramel ice cream topping
To serve, invert the pan onto a plate. Remove the parchment paper and slice the loaf.
Lay slices on their sides on individual plates. Drizzle with melted chocolate and caramel sauce, then sprinkle with peanuts. Now sit back and wait for the compliments!
